Tony Lu is head chef of Fu He Hui, the acclaimed Shanghainese Buddhist vegetarian restaurant that has one Michelin star and was the only Chinese chef operating a restaurant in Mainland China included in the Asia’s 50 Best Restaurant list. Emphasizing a lighter, healthier approach to Shanghainese food, Chef Lu’s cooking presents vegetables and plant protein with an approach not designed to imitate meat. He oversees a collection of four restaurants in the Fu Group in the Shanghai area.
